INGREDIENTS
1 box (8 oz) Bentilia red lentil macaroni pasta
1/2 cup Red bell pepper, diced
½ cup Celery, diced
½ Red onion, diced
2 Hard boiled eggs, chopped
½ cup Sweet peas
GREEK YOGURT DRESSING
¾ cup Greek yogurt
1 tbsp. Lemon juice
1 tsp. Apple cider vinegar
1 tsp. Honey
½ tsp. Dijon Mustard
Salt & Pepper to taste
INSTRUCTIONS
- Bring 3 cups of salted water to a boil and cook red lentil Macaroni pasta for 6-7 minutes as you would your regular pasta. Refrigerate;
- Combine cooled pasta with red bell pepper, celery, onion, eggs and peas in a large serving bowl;
- In a mixing bowl, combine and whisk all Greek yogurt dressing ingredients;
- Pour dressing on the ingredients, toss and serve.
