Ingredients
- 1 Box Bentilia Red lentil Penne pasta
- 5 Tablespoons olive oil
- 1-2 cloves garlic
- ¾ cups fresh chopped tomatoes
- 1 tablespoon tomato paste
- 3 fresh basil leaves, chopped
- ¼ cup parmesan cheese
- 2 tablespoons flat-leaf parsley finely chopped
Instructions
Pasta:
- Bring 3 cups of salted water to a boil and cook red lentil Penne pasta for 7-8 minutes as you would your regular pasta;
- Rinse & drain
Arrabiata sauce:
- Add oil, garlic, and crushed red pepper to a skillet over medium heat and cook for 30 seconds;
- Add the whole tomatoes, tomato paste, and simmer for 10 minutes before removing from heat and adding the fresh basil;
- Add pasta & parmesan;
- Top with Parsley;
- Toss & Enjoy!
