Ingredients:
- Salt & Pepper to taste
- ¼ cup olive oil
- 5-6 medium zucchini, rinse, trimmed and sliced
- 2 portobello mushrooms, roughly sliced
- 1 large onion chopped
- 2-3 sprigs of thyme
- 2 tomatoes roughly chopped with their juice
- 1 Box Bentilia red lentil Rotini pasta
Instructions:
- Bring 3 cups of salted water to a boil and cook red lentil Rotini pasta and cook until it is nearly but not quite tender (~5 minutes);
- Put olive oil in a large skillet over medium heat;
- Add zucchini, portobello mushrooms, onion and thyme, and cook, stirring occasionally. Add salt and pepper to taste and adjust the heat (~20 minutes). Add water as needed;
- Add tomatoes and their liquid to the skillet and raise heat a bit;
- Add the pasta into the sauce and finish cooking it in sauce;
- Serve & Enjoy!
