Zucchini pasta


 Servings: 2          Cook Time: 30 minutes


  1. Salt & Pepper to taste
  2. ¼ cup olive oil
  3. 5-6 medium zucchini, rinse, trimmed and sliced
  4. 2 portobello mushrooms, roughly sliced
  5. 1 large onion chopped
  6. 2-3 sprigs of thyme
  7. 2 tomatoes roughly chopped with their juice
  8. 1 Box Bentilia red lentil Rotini pasta


  1. Bring 3 cups of salted water to a boil and cook red lentil Rotini pasta and cook until it is nearly but not quite tender (~5 minutes);
  2. Put olive oil in a large skillet over medium heat;
  3. Add zucchini, portobello mushrooms, onion and thyme, and cook, stirring occasionally. Add salt and pepper to taste and adjust the heat (~20 minutes). Add water as needed;
  4. Add tomatoes and their liquid to the skillet and raise heat a bit;
  5. Add the pasta into the sauce and finish cooking it in sauce;
  6. Serve & Enjoy!
