Arugula Zimmunity Pasta Salad

Ingredients:
- 2tsp Youndu
- 3 tbsp of shelled hemp seed
- 1tsp lemon juice
- 8 oz of Zimmunity pasta
- 0.5 C Red Onion Thinly sliced
- 2 C Arugula
- 0.5 cherry tomatoes halved
- Fresh Dill
- Lemon Zest
- Fresh crushed pepper
Instructions:
- Cook the Zimmunity pasta according to package instructions
- Meanwhile, Mix Youndu & lemon juice in a bowl and set aside
- Once cooked & cooled, put the pasta in a larger bowl
- Add the red onion, arugula, hemp seed, cherry tomatoes & vinaigrette to the pasta and toss gently
- Serve immediately, garnishing with lemon zest, fresh crushed pepper and fresh dill to taste.
